APPLE HARVEST COFFEE CAKE

Ingredients:

4 c. diced apples
2 c. sugar
3 c. flour
2 tsp. baking soda
1 tsp. nutmeg and cinnamon
2 eggs
1 c. oil
1 tsp. vanilla
1/2 c. chopped nuts

Method:

Mix apples and sugar together. Let set 1 hour. Sift dry ingredients. Beat
eggs, add oil and vanilla, then apple mixture. Add flour mixture and nuts.
Bake in large, greased tube pan 1 hour at 350F.
