Apple Spice Cake With Brandy Hard Sauce

Ingredients:

Cake
2 cups finely chopped apples
1/4 cup water
1 1/2 cups Land O Lakes Unsalted (Sweet) Butter, softened
2 cups sugar
2 eggs
4 cups all-purpose flour
4 teaspoons baking soda
2 teaspoons cinnamon
2 teaspoons nutmeg
1 teaspoon salt
1 teaspoon cloves
1 cup currants
1 cup chopped pecans
1/2 cup all-purpose flour
Hard Sauce
1/2 cup Land O Lakes'~ Unsalted (Sweet) Butter, softened
1 cup powdered sugar
1 tablespoon brandy

Method:

Heat oven to 325 degrees. In 3 quart saucepan, combine apples and water. Cook, uncovered, over medium heat, stirring occasionally, until apples are crisply tender, 7 to 9 minutes. Remove from heat. Stir in butter until melted. Stir in sugar and eggs until well blended. In bowl, combine 4 cups flour, baking soda, cinnamon, nutmeg, salt and cloves. Stir into apple mixture. In same bowl, toss currants and pecans with 1/2 cup flour until coated. Stir into batter until well mixed. Spoon into 10 inch greased bundt pan or tube pan. Bake in bundt pan for 65 to 75 minutes, or tube pan for 70 to 80 minutes) until wooden pick inserted in center comes out clean. Cool in pan 15 minutes. Meanwhile, in 1 1/2 quart mixer bowl, combine all hard sauce ingredients. Beat at medium speed until light and fluffy, 3 to 5 minutes. Invert cake onto serving plate. Serve slices of warm cake with a dollop of 1 tablespoon hard sauce on each slice.
Makes 1 (10 inch) cake with 1 1/4 cups hard sauce (20 servings).
