BBQ Chicken Wonton Cups

Ingredients:

12 wonton wrappers
1 c. cooked, chopped chicken
4 oz. cream cheese, softened
4 oz. sour cream
1/2 c. + 2 Tbsp. shredded cheese
1 Tbsp. thinly sliced red onion
1/4 c. cooked, crumbled bacon
bbq sauce, to taste
fresh cilantro, minced

Method:

1. Preheat oven to 350°.
2. Spray a 12 cup muffin pan with nonstick cooking spray.
3. Place one wonton wrapper in each cup and press down in the center.
4. Pre-bake wonton wrappers for 8-10 minutes, until light golden brown.
5. In a small mixing bowl, combine 4 oz. cream cheese, 4 oz. sour cream, 1c. cooked, diced chicken, 1/2 c. shredded cheese, and 2 Tbsp. crumbled bacon. Mix by hand.
6. Spoon filling into pre-baked wonton shells. Top with additional 2 Tbsp. shredded cheese, 2 Tbsp. crumbled bacon, and sliced red onion.
7. Bake for an additional 8 to 10 minutes. If necessary, cover with foil for the last few minutes to prevent over browning.
8. Remove from oven and garnish with cilantro.
