Baiked salmon with white wine sauce

Ingredients:

1 cup minced mushrooms (any) kind
4 green onions
1/2 cup white wine
2 eggs,beaten
3tblsp. butter (unsalted)
2tsp.pepper corns ( green)
4 4-oz. salmon fillets skinless
salt & pepper

Method:

1. preheat oven 450
2. Arrange mushrooms and onions in oven dish
3. place salmon on top pour wine over them sprinkle with salt & pepper
4. cook for 10 to 15 min. remove and keep salmon warm
5. fold some cooking juices from salmon into beaten eggs
6. pour remaining juice into sauce pan heat then fold in eggs whisk until mixture thickens add butter spoon over salmon. sprinkle with green pepper corns
& ground black pepper. serve
