Baked Custard Dessert (with sauces)


3 eggs, slightly beaten
1/4 cup granulated sugar
1/4 teaspoon salt
2 cups milk, scalded
1/2 teaspoon vanilla


Combine eggs, sugar and salt. Slowly add scalded milk
and vanilla. Pour into 6 (5 ounce) custard cups or pour into a
shallow 1 quart baking dish. Bake in pan of hot water in a
slow oven, 325 degrees, until mixture doesn't adhere to a knife, about
30 to 40 minutes. Serve warm or chill and serve cold.

Helpful Hints:

Maple Sauce:
1 cup brown sugar
1 Tablespoon flour
dash of salt
1/2 cup water
1 teaspoon butter or margarine
Omit nutmeg. Combine ingredients. Cook until thick,
stirring constantly. Cool. Add a few drops maple flavoring.
Drizzle over baked custard.
Caramel Sauce:
Melt 1/2 cup sugar in a heavy skillet
over low heat until caramelized, stirring constantly. Remove
from heat. Add 1/2 cup water all at once. (The mixture will
sputter.) Stir until sugar dissolves. Simmer a few seconds
until of syrup consistency. Now spoon over baked custard.
