Banana Bread

Ingredients:

2 eggs
2/3 cup sugar
1/3 cup shortening
1-3/4 cups flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1 cup mashed ripe bananas

Method:

Beat the eggs, sugar, and shortening together, at medium speed, until light
and fluffy. Mix the dry ingredients together. At low speed, mix in the dry ingredient mixture, alternately with the mashed bananas, just until smooth. Bake in a preheated oven at 350 degrees for 50 to 60 minutes or until a pick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then remove the baked bread from the pan to
a wire rack. Cool completely before slicing.
