Bean Burger Soup

Ingredients:

1/2 cup butter or margarine
1 pound ground beef
1/2 cup flour
1 package (10 ounce) frozen mixed vegetables
3 cups boiling water
2 cans (15 ounce) Grandma Brown's Bean Soup
1 teaspoon dried parsley
2 beef bouillon cubes
1 can (28 ounce) canned tomatoes
teaspoon salt
1 medium onion, chopped
tsp. pepper
1 large potato, diced
1 tsp. molasses or brown sugar

Method:

In a 4 quart or larger pan, melt butter; stir in flour. Remove from heat and add boiling water, stirring until smooth (mixture will be very thick). Blend
in bean soup. In a blender, combine tomatoes, potatoes, and onion, until vegetables are finely chopped; add to soup along with mixed vegetables. Crumble uncooked ground beef by teaspoonful into soup. Add remaining seasonings and simmer; stirring frequently, for 45 to 60 minutes
or until vegetables are tender.

Helpful Hints:

Yield: 15 cups; 8 to 10 generous servings. Leftovers freezes well.
