Cajun chicken in a crockpot

Ingredients:

4 to 5 chicken thighs
1 onion chopped
3 cloves garlic, minced
1 green pepper, chopped
2 ribs of celery
1 15 oz. can diced tomatoes
Cajun seasoning to taste
Hot sauce to taste
1 tsp. thyme

Method:

Season chicken with Cajun seasoning and brown in a hot skillet.
Place in crockpot.
Saute onions, green pepper and garlic.
Add to crockpot along with remaining ingredients.
Cook on low for 4-5 hours.

Cook the rice of your choice and serve with the chicken and vegetables.

Kay’s note: I like to cook the rice in the chicken bullion for extra flavor.
