Cowboy Biscuit Casserole

Ingredients:

1/2 pound bacon
1 pound ground beef
1 small onion, chopped
2 (15-ounce) cans baked beans with pork
1/3 cup barbecue sauce
1 (7.5-ounce) package refrigerated biscuit dough

Method:

1 In a large, oven-safe skillet or Dutch oven over medium heat, cook the bacon until browned, about 5 to 7 minutes. Drain the fat from the skillet.
2 Cut the bacon into bite-size pieces and set aside.
3 Add the beef and the onion to the skillet, and cook until the beef is no longer pink and the onion is tender, about 5 to 7 minutes. Drain the fat from the skillet.
4 Stir the bacon, the baked beans, and the barbecue sauce into the ground beef mixture.
5 Bring the mixture to a boil.
6 Reduce the heat to medium-low and place the biscuits in a single layer over the top of the mixture.
7 Cover and simmer until the biscuits are done, about 10 minutes.
8 Preheat the broiler.
9 Place the skillet under the broiler and broil until the biscuits are browned on top, about 2 to 3 minutes.
10 Plate the biscuits and spoon the beans over the biscuits.
11 Serve.
