Cranberry Gelatin Salad (Diabetic)

Ingredients:

2 (0.3 ounce) packages sugar-free raspberry gelatin
Fresh Cranberry Relish
1 orange
1 package (12 ounces) fresh or thawed frozen cranberries
2 medium tart apples, unpeeled, cored and coarsely chopped
5-1/4 teaspoons Equal? for Recipes or 18 packets Equal? sweetener or 3/4 cup
Equal? Spoonful?
1/8 teaspoon salt

Method:

1. Prepare gelatin according to package directions except use 1 1/2 cups
boiling water and 1 1/2 cups cold water; refrigerate until mixture is consistency of unbeaten egg whites.
2. Prepare Fresh Cranberry Relish; stir into gelatin mixture and spoon into
lightly greased 8-cup mold or casserole. Refrigerate until set, about 4 hours.
3. To unmold, briefly dip mold into warm water and loosen top edge of mold
with tip of sharp knife. Unmold onto serving plate lined with salad greens.
Fresh Cranberry Relish
Grate rind from orange and reserve. Peel orange; cut orange into large
pieces. Place orange rind, orange pieces, cranberries and apples in food processor; process until finely chopped. Stir in Equal? and salt. Refrigerate until ready to serve.
Note: Amount of Equal? may vary depending on the tartness of the apples and
cranberries.
