Creamy Vanilla Frosting

Ingredients:

2 1/3 cups confectioners sugar
2/3 cup vegetable shortening - such as Crisco
egg substitute - such as Eggbeaters - use the amount equal to one egg (2
Tablespoons
for most
brands)
4 1/2 Tablespoons sugar - granulated
2 Tablespoons water
1 tsp. vanilla

Method:

Mix confectioners sugar, egg substitute, & Crisco together. Make a syrup
with 2 tablespoons water (very hot) and 4 1/2 tablespoons granulated sugar. Add to other ingredients and beat at high speed for 2 to 3 minutes. Add vanilla and beat again.
this is extra creamy and spreads very easily.
The recipe is enough to generously frost an 8" or 9" layer cake, a 9 inch by
13 inch sheet cake or more than 2 dozen cupcakes.
