Enchilada

Ingredients:

1/2 lb. ground beef
1/4 c. chopped onion,
1/4 c. chopped green pepper
***2small cans red or green enchilada sauce
2 c. (or more as desired) grated Cheddar cheese
1 pkg. corn tortillas, about 9
1 can refried beans, optional

Method:

Saute ground beef , onions and green pepper. Drain fat and set mixture aside.
Combine 1 can enchilada sauce and 1 cup grated cheese.
Soften tortilla shells in microwave or over steaming water for easy rolling.
Place down the center of each tortilla approximately 1 tablespoon of refried beans; then spoon on some of the beef mixture.
Spoon on some of the cheese mixture.
Roll up the enchilada. It may be messy. Place in long casserole dish. Repeat until all tortillas are used. Pour other can of enchilada sauce over enchiladas. Sprinkle cheese on top.
Bake in350 degrees F oven for about 20 minutes or until hot and bubbly.

Helpful Hints:

shredded chicken may also be substituted of hamburger.
*** green ehnchilada sauce is spicier than red sauce.
