Feel Better Salad

Ingredients:

1 pound of baby spinach leaves
2 4-ounce baked boneless skinless chicken breasts
1/3 cup of chopped dried apricots
1/3 cup of crumbled blue cheese
1/2 cup of slivered almonds
1/4 cup of lemon juice
2/3 cups of olive oil
3 tablespoons of honey
(to taste) salt and pepper

Method:

Whisk together oil, lemon juice, honey, salt and pepper.
In a large bowl, place washed spinach, apricot, almonds, and cheese. Toss with dressing. Place on serving plates and top with sliced chicken breasts.
Recipe Serves 4
