Fresh Apple Cake

Ingredients:

1 1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 cup margarine or butter, softened
1 cup granulated sugar
2 eggs
4 cups finely chopped, pared apples
1 cup Kellogg's All-Bran cereal or Kellogg's Bran
Buds cereal
1 (3 ounce) package cream cheese, softened
1 tablespoon butter or margarine, softened
1 teaspoon vanilla flavoring
1 1/2 cups sifted powdered sugar

Method:

Stir together flour, baking soda, salt, cinnamon and nutmeg. Beat the 1/2 cup margarine and the granulated sugar. Beat in eggs. Stir in apples, cereal and flour mixture. Spread in greased 9 x 9 x 2 inch baking pan. Bake at 350 degrees about 45 minutes, or until done.
To make frosting, beat cream cheese, the 1 tablespoon butter and vanilla. Gradually add powdered sugar, beating until smooth. If frosting is too thick, add 1 to 2 teaspoons milk. Spread on cooled cake. Yield 12 servings.
Variations:
In place of Kellogg's All-Bran cereal, use 2 cups Kellogg's 40% Bran Flakes cereal, Or crush 1 1/3 cups Kellogg's Cracklin' Bran cereal to coarse crumbs.
