Fresh Peach Shortcake

Ingredients:

8 biscuit dough pucks
2 tablespoons of sugar in the raw
2 fresh peaches, pitted and sliced
3 tablespoons of granulated sugar
1 teaspoon of ginger
2 cups of whipped cream

Method:

Place biscuit dough on a cookie sheet and sprinkle with sugar in the raw.
Bake at 375 degrees for about 12 minutes, or until golden brown. Remove from oven and let cool. Toss together granulated sugar and ginger. Sprinkle over peaches and let stand covered for 30 minutes.
Split biscuits top bottom half with some slices peaches and 2 tablespoons of whipped cream. Add top and repeat with peaches and whipped cream.
Enjoy.
