5 eggs
¼ cup water
3 to 4 green onions, chopped
1 tablespoon butter
¼ cup basil leaves, sliced
½ cup ricotta cheese


Sauté sliced green onions in butter until soft; stir in beaten eggs and sliced basil.

Cook on stovetop until bottom is set, then top with dollops of ricotta
and place under broiler until cooked through.
