Giant Peanut Butter Cup Cookies

Ingredients:

1 1/4 cups flour� *
1/2 teaspoon baking soda *
1/4 teaspoon salt� *
1/4 lb. butter or margarine, room temperature
3/4 cup sugar
1/2 teaspoon vanilla
1 egg
16 mini Reese's Cups
(* I just use self-rising flour and eliminate the
soda & salt, whatever your preference.)

Method:

Heat oven to 325 degrees F. Combine flour, soda, salt. Beat butter
& sugar until light & fluffy. Beat in vanilla and egg. Stir in flour
mixture. Drop dough by level 1/4-cup measures onto ungreased baking sheet.
Cut each mini-Reese Cup into 4 pieces and push 8 pieces into each cookie,
flattening the dough slightly. Bake until cookies are a light golden
color,about 15 minutes. The centers will still be pale and a little soft.
Let cookies stand 1 minute on the baking sheet before removing them to
racks.
Makes about 8 (BIG) cookies.
