Granny's WholeWheat Pumpkin Bread (Diabetic)

Ingredients:

� cup all-purpose flour
� cup whole wheat flour
� teaspoon salt
1 cup Stevia
1 teaspoon baking soda
1 cup pumpkin puree
� cup canola oil
1 whole egg
1 egg white
? cup water
� teaspoon nutmeg
� teaspoon cinnamon

Method:

1. Preheat oven to 350�F.
2. Spray a 9? x 5? x 3? loaf pan with non-stick cooking spray.
3. In a large mixing bowl, combine all ingredients in the order listed, stirring
after each addition.
4. Stir only enough to combine ingredients into a smooth batter.
5. Pour into prepared pan.
6. Bake for 45 � 50 minutes.
