Grilled Marinated Chicken Sandwiches

Ingredients:

Marinade
8 oz Guinness beer
1/4 cup olive oil
1/4 cup soy sauce
2 tbsp toasted sesame oil
1 tbsp minced garlic
1 tbsp dried oregano
1 tbsp dried basil
1 tbsp brown sugar
1 tbsp crushed red pepper flakes
Sandwiches
4 large chicken breasts
4 kaiser rolls, split
2 tbsp olive oil
1 tsp smoked paprika
8 oz cheddar cheese
2/3 cup chipotle mayonnaise
4 thick tomato slices
bibb lettuce leaves

Method:

Marinade
In a large bowl, mix together the beer, olive oil, soy sauce, sesame oil, garlic, oregano, basil, brown sugar and red pepper flakes.
Lay the chicken in a shallow dish. Pour the marinade over chicken and turn to make sure they are well coated.
Place in the fridge for at least 1 hour.
Sandwiches
Prepare the grill. Brush the cut sides of the rolls with olive oil and sprinkle with paprika. Grill oiled sides down, until slightly charred, 1 to 2 minutes.
Remove and set aside. Lift the chicken from the marinade and grill for 5 to 7 minutes or until no longer pink.
Baste the chicken with remaining marinade during grilling.
As soon as you pull the chicken off the grill, sprinkle the chicken with cheese while still hot to melt.
Meanwhile, spread the mayonnaise on each roll.
Top with chicken, lettuce and tomato and enjoy!
