Healthy Summer Side: Broccoli-Pineapple Slaw

Ingredients:

Makes 6 cups or 12 servings
Serving size 1/2 cup
1 cup plain low-fat Greek yogurt
2 tbsp soy sauce
2 tbsp agave syrup
1 tbsp hot sauce
12 oz pre-packaged broccoli slaw
7 scallions, green and white parts, thinly sliced
2 cups julienned pineapple (a little fatter than matchstick size)
1/3 cup slivered almonds
1/4 cup chopped cilantro

Method:

In a large bowl, stir together the yogurt, soy sauce, agave syrup, and hot sauce
until well combined. Toss in the broccoli slaw, scallions, pineapple, almonds and
top with cilantro.

Crunchy, healthy and refreshing, this no-cook slaw is the perfect side dish for any party! The agave and hot sauce give a sweet and fiery taste that’ll also boost your metabolism. Plus, the low-fat Greek yogurt is creamy and filling, but doesn’t cost you too many calories. In fact, one serving of this side is only 70 calories, much
less than traditional coleslaw.
