Holy Moly Casserole

Ingredients:

3 tablespoons olive oil
1/2 tablespoon paprika
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
1 1/2 pounds chicken breasts, boneless, skinless, and cut into 1-inch pieces
5 medium Russet potatoes, peeled and cut into 1-inch pieces
2 cups cheddar cheese, shredded
1/2 cup bacon, cooked and chopped
2 green onions, thinly sliced

Method:

1 Preheat the oven to 400 degrees F.
2 Grease a 9x13-inch baking dish with nonstick spray.
3 In a large mixing bowl, whisk together the olive oil, the paprika, the garlic powder, the salt, and the pepper.
4 Add the chicken and the potatoes to the oil mixture and stir to coat everything.
5 Pour the chicken and the potatoes into the prepared baking dish, spreading them out evenly.
6 Bake, uncovered, until the internal temperature of the chicken is 165 degrees F, about 45 to 55 minutes.
7 Sprinkle the top of the casserole with the cheese, the bacon, and the onion.
8 Bake again until the cheese is melted, about 5 minutes.
9 Let stand for 5 minutes.
10 Serve.
