Honey roasted root vegetables

Ingredients:

6 tablespoons olive oil
2 turnips, peeled and cut into 1 inch chunks
4 yams cut into 1 inch chunks
10 carrots cut into 1 inch pieces
4 onions, cut into 1 inch pieces
5 whole garlic cloves, peeled
1 tablespoon ground sage
1 tablespoon rosemary
2 tablespoons honey
salt& pepper

Method:

Oven 450F. Place roasting pan in oven for 15 minutes. Remove pan. Put a few tablespoons of olive oil into the bottom of the pan.
In a large bowl put the vegetables with the other ingredients. Cover and shake to distribute the coating.
Place in the roasting pan and bake covered for 60 minutes or until tender.

Helpful Hints:

Cooks note: You may also use parsnips, rutabagas or other root vegetables in addition to those mentioned or in place of.
Stir occasionally.
