Ivan's Potato Salad

Ingredients:

10 medium potatoes, peeled, thinly sliced, 6 cups
6 tablespoons oil
3 tablespoons vinegar
3 tablespoons lemon juice
1/4 cup chopped onion
1/4 teaspoon powdered dill
Dash of salt and pepper
4 hard cooked eggs, chopped
1/4 cup mayonnaise
3 tablespoons Romanoff Caviar
Additional Caviar for garnish

Method:

Cook potatoes in boiling salted water until barely tender, about 8 minutes. Drain. In large bowl, combine oil, vinegar, lemon juice, onion, dill, salt and pepper. Add potatoes; toss to coat. Mash eggs with mayonnaise. Gently stir in Caviar and fold into potatoes. Cover; keep cold. At serving time, garnish with additional Caviar.
Makes 8 generous servings.
