Kay's Lasagna

Ingredients:

1 box of no boil lasagna noodles
32 oz. spaghetti sauce
8 small meatballs
½ lb. Italian sausage
2 hard boiled eggs, sliced
½ lb. mozzarella cheese
½ cup parmesan cheese
2 lbs. ricotta cheese
2 fresh eggs
1 tblsp. parsley
9 by 13 baking dish

Method:

Cook sausage and slice in ¼ inch discs.
Sauté meatballs.
Mix together the ricotta cheese, parmesan cheese, 2 fresh eggs and parsley.
Now you are ready to assemble…

Spoon some sauce on the bottom of your baking dish. You will need only about a half cup. This is so the noodles won’t stick.
Place a layer of the noodles on the sauce to cover bottom of baking dish.
Spoon on half of the ricotta cheese mixture.
Sprinkle on one third of the mozzarella cheese.
Put half the meatballs and sausage on this layer and half of the boiled egg slices. Top this with about a cup or so of the sauce.
Then a layer of noodles. Add remainder of the ricotta mixture, meatballs, sausage, eggs, and another third of the mozzarella.
Pour on half of the remaining sauce
Finish with a layer of noodles, topped with the remaining sauce and mozzarella.
Cover with aluminum foil and bake in a 350 F oven for 1 hour. Remove foil and bake for another fifteen minutes.
