Lime Mousse

Ingredients:

1 envelope unflavored gelatin
1 6 ounce can frozen limeade
? cup cold water
6 drops green food coloring, optional
4 slightly beaten egg yolks
4 egg whites
1 8 ounce container cool whip, thawed
line slices, optional

Method:

In a small saucepan soften gelatin in limeade and water for 5 minutes. Stir in food coloring. Heat and stir until gelatin is dissolved and mixture is very hot.
Gradually stir half of hot gelatin mixture into beaten egg yolks; return all to saucepan. Cook and stir until thickened and bubbly then cook for 2 minutes more.
Remove from heat. Chill pan in ice water bath for 10 minutes. It will be partially set. Stir often.
Remove from ice water.
Beat egg whites until stiff peaks form. Fold about ? cup into the limeade mixture. Then reverse and put the mixture into the egg whites. Then fold in the cool whip. Transfer into a pretty bowl! Chill for 6 hours to overnight.
Garnish with lime slices if desired.
