Mexican Quiche

3 flour tortillas
1 cup egg beaters
� cup cottage cheese
1 � tsp. taco seasoning
1 cup cooked chicken
1 can korn with red&green peppers
� cup chopped green onion


Heat oven to 350f
Place 1 tortilla on bottom of pie pan. Quarter the other ones and place around the side of the pan.
Place chicken, drained corn and green onion on the bottom of pan.
mMix egg beaters and cottage cheese in a bowl and mix together.
Pour over ingredients on bottom of the pan.
Sprinkle with the taco seasoning.
Bake for 40 minutes and let sit 10 minutes.
Top with tomato, avocado, sour cream and olives if desired.
