Mushroom and Provolone Chicken

Ingredients:

3 Tblsps olive oil
6 chicken breasts, boneless & skinless
1/4 cup butter or margarine
1 cup portabella mushrooms, sliced
4 green onions, chopped
1/2 cup zucchini, diced
6 proshootto slices
6 provolone cheese, sliced

Method:

In a large skillet; heat olive oil over medium heat. Add chicken and brown.
Once brown, remove from pan.
To the skillet; add butter, mushrooms, onions and zucchini. Sauté over
medium heat until tender, about 5 minutes. While veggies sauté; wrap each
chicken breast in a slice of proshootto. Place in a 9 x 13 inch (23 x 33 cm)
baking dish. When veggies are tender, spoon over chicken breasts and cover
with cheese slices. Bake in preheated 350 F (180 C) oven about 20 minutes or
until chicken is cooked through and cheese is melted. Serves 6
