Nick's guacamole

Contributed By: Kay Davis

Ingredients:

4 avocados
1/2 red bell pepper
1/2 yellow bell pepper
1/2 orange bell pepper
1 small tomato(use one from the garden if you can)
1/2 viadalia onion
1 clove of garlic for each avocado(you can never use too much!)
1 lime, juice of
sea salt
fresh ground pepper
1 serrano pepper (2 if you like it hot)
fresh cilantro
(I drizzle olive oil over the top at the end

Method:

use a sharp knife to cut length wise around the avocado so that there are two halves.

Chop the knife into the pit to pull it out, scoop greens out with a spoon.

mash up avocados in a medium bowl. add lime juice and a few sprinkles of sea salt to break down the avocados.

dice bell peppers and add to mixture.

Dice tomato and onion and add to mixture.

Smash garlic( a garlic press works best) and finely chop cilantro and add to mixture.

Grind pepper into guacamole.

finely chop the serrano pepper and add.

taste your guacamole and add more ingredients to taste ( I usually have to add more salt/garlic at the end). when you are satisfied with the taste drizzle
a small amount of olive oil over the top and mix. Enjoy with tortilla chips or on top of your favorite foods!
