OVEN FRIED CHICKEN

Ingredients:

2-3 pounds chicken pieces washed and patted dry.

In a bag, mix the following ingredients:
1 cup flour,
1-1/2 tbsp. salt,
1-1/2 tbsp. paprika
1/4 tsp. pepper.
Sprinkle some garlic powder into the mix if desired.

Method:

In a 13 by 9 by 2 inch pan, melt 1/4 cup each, butter and olive oil.
Place butter and oil pan in oven set to 425 degrees, and melt for about
5 minutes.

Place chicken pieces into the bag of dry ingredients, and seal tightly.
Shake to coat the chicken pieces with the flour mixture.

Remove pan from the oven and place chicken into it in a single layer.

Bake min.45. Turn each piece and continue baking for another min.15.

This recipe comes from an old cook book I have had for years. The
recipe is a family favorite.

Suggestions: Schwan skinless boneless chicken breasts work quite well.
If you prefer dark meat, you might want to remove the skin; however, it
is not absolutely necessary.
