Onion Pudding

Ingredients:

Serve this hearty side dish with any entree.

Serves 4

4 Tablespoons Butter
3 medium Onions, thinly sliced
2 Tablespoons Sugar
1 teaspoon Salt
1 1/2 Tablespoons Flour
1 teaspoon Baking powder
1 Tablespoon Parsley, chopped
3 Eggs, beaten
1 cup Cream or milk

Method:

Preheat the oven to 350. Melt the butter in a skillet. Add
the onions and cook over low heat until lightly brown(about 25-30 minutes). Allow this to cool slightly. Add the
sugar, salt, flour and baking powder to a mixing bowl. In a separate bowl, blend together the eggs and cream. Whisk the
egg mixture into the dry mix. Add the parsley and onions.
Lightly grease a medium (1-quart) casserole. Add the
mixture and bake for 25-35 minutes (or until lightly brown and firm in the middle). Serve warm.
