Pumpkin Cookies

Ingredients:

2 cups flour
1 1/3 cups quick oats
1 tsp. baking soda
1 teaspoon cinnamon
1/2 tsp. salt
1 cup butter or margarine
1 cup sugar
1 cup light brown sugar
1 cup cooked pumpkin
1 egg
1 tsp. vanilla
3/4 cup chopped pecans or walnuts
3/4 cup raisins

Method:

Combine flour, oats, baking soda, cinnamon and salt. In a separate bowl,
combine
butter, sugar, and brown sugar. Beat till light and fluffy. Add pumpkin,
egg, and
vanilla. Mix well. Add flour mixture and mix well. Add nuts and raisins.
Stir. Drop
by tablespoons ful onto a greased cookie sheet. Bake at 350 degrees for 12
to 14 minutes
or until cookies are very lightly browned. Cool for about 2 minutes before
removing
from cookie sheets.
