Queso Taco Casserole

Contributed By: Terry Borden

Ingredients:

1 pound ground beef
1 small onion, chopped
1 bottle (8 ounce size) taco sauce
3/4 cup water
1 can (4 ounce size) diced green chiles
1 package (1.25 ounce size) taco seasoning mix
1 package (12-count size) yellow or white corn taco shells, broken, divided
2 cups shredded cheddar cheese, divided
Garnish Options
chopped tomatoes
sliced green onions
sour cream

Method:

Heat oven to 375 degrees F. Grease 11X7 baking dish.
Cook beef and onion in large skillet until beef is browned; drain. Stir in
taco sauce, water, chilies and seasoning mix; bring to a boil. Reduce heat
to low; cook, stirring occasionally, for 3 to 4 minutes.

Layer half of broken shells on bottom of prepared baking dish. Cover with
half of meat mixture; sprinkle with 1 cup cheese. Repeat with remaining
ingredients.

Bake for 20 to 25 minutes or until bubbly and cheese is melted. Garnish as
desired. Enjoy.

Helpful Hints:

Two ways to serve this taco bake: as a dinner casserole or as nachos. If
you're going the nacho route, leave out the taco shells and use them to
scoop up all the spicy, cheesy, baked taco goodness.
