Refreshing Cucumber-Mint Granita

Ingredients:

Makes 1 serving or about 1 cup
1 medium English cucumber, roughly chopped
1/4 cup chopped fresh mint
1 1/2 tbsp honey
Dash of lemon juice

Method:

In a food processor, chop all ingredients until finely puréed. Transfer to a shallow metal pan and freeze for about 2 hours. Stir mixture every 30 minutes and scrape down the sides as ice crystals form.
Once completely frozen, briefly put the granita back into the food processor and
quickly pulse it to finer consistency or scrape it out of the pan in rougher crystals, depending on your preference.

This four-ingredient recipe is a great refreshing treat that can replace sugary Italian ice or ice cream, or can be served alongside savory dishes to create the perfect cooling finish. A great pick-me-up or a palate cleanser between courses, it’s also low in fat and big on flavor, which is a satisfying combination for dieters!
