Seafood Gumbo

Ingredients:

1 clove garlic, minced
1 large onion, chopped
1/2 green pepper, diced
1/4 cup Wesson Oil
1 (14.5 ounce) can Hunt's Whole Tomatoes
1 (6 ounce) can Hunt's Tomato Paste
3 cups water
1 tablespoon Worcestershire sauce
2 teaspoons salt
1 bay leaf
1/2 teaspoon chili powder
1/2 teaspoon crushed basil leaves
1/2 pound crab meat
1/2 pound raw shrimp, shelled and cleaned
1/2 pound fresh haddock or halibut, cut in chunks
1 (10 ounce) package frozen sliced okra, partially thawed
3 cup hot cooked rice

Method:

In a Dutch oven, saute garlic, onion and green pepper in hot oil, stirring until tender. Add remaining ingredients except seafood, okra and rice. Simmer, uncovered, 45 minutes; remove bay leaf. Add crab, shrimp, haddock and okra; cover and simmer 10 to 12 minutes. Serve in soup bowls over rice.
Makes 8 servings.
