Slow Cooker French Onion Chicken

Ingredients:

4 large boneless, skinless chicken breasts
2 large vidalia onions, thinly sliced
2 Tbsp. butter
1 (14 oz.) can beef broth
2 Tbsp. cooking sherry or dry white wine (optional)
2 cloves minced garlic
1/2 tsp. salt

Method:

1. In a large skillet over medium-high heat, melt butter and saute onions until golden brown.
2. Remove from skillet and add to slow cooker.
3. In the same skillet, brown chicken breasts on both sides over medium-high heat, 3 to 4 minutes.
4. Remove from skillet and add to slow cooker with onions.
5. Add beef broth, cooking sherry or wine, minced garlic, and salt.
6. Cover slow cooker and cook on low heat 4 hours.
7. Serve over polenta or mashed potatoes.
