Sweet Potato Pie

Ingredients:

4 medium sweet potatoes
2 eggs
1 cup sugar
1 teaspoon vanilla extract
Pinch of salt
1/2 teaspoon ground nutmeg
1/2 cup butter (1 stick)
1/2 cup evaporated milk
1 unbaked 9-inch pie shell

Method:

Boil the potatoes until soft, then peel and place them into a mixing bow. Beat until there are no lumps remaining. Add the eggs, sugar, vanilla,
salt, nutmeg, butter and milk; beat until creamy. Pour into pie shell and bake in a 350 degree oven until crust is brown. Approximately 30 minutes or until a toothpick comes out clean.
