Contributed By: Terry Borden

Ingredients:

½ cup Rhubarb – diced (2 3/8 oz.)
1 cup Orange Juice
1 cup frozen Banana slices – firm packed, about 2 bananas, peeled and sliced
2 cups frozen Strawberry – cut in half (10 oz.)
1 teaspoon Ginger – minced (1/8 oz.)

Method:

In small pot, simmer rhubarb in orange juice for 15 minutes until tender. Strain
and reserve both the cooked rhubarb and juice. In blender, combine frozen strawberry, banana, ginger, rhubarb and Ό cup of reserved juice. Blend until smooth and serve or freeze for a harder consistency.

Helpful Hints:

When you think of ice cream, sorbet and other creamy summer delights, you probably think of two words – sugar and calories. But what if you could get all the satisfaction without those two scary words? This sorbet is a hit with both kids and adults and contains less than 100 calories and much less sugar than store-bought sorbets. Additionally, it’s got real ginger in it. Several studies have linked ginger to decreased inflammation in the body and, if your little one’s tummy is in need of being tamed, ginger has
been shown to help with stomach discomfort as well! There is nothing better than
enjoying a cool and refreshing treat on a hot summer night – why not try something that will improve your health too?
