Turkey Loaf

Ingredients:

2 tblsp. Oil
1 rib celery, chopped
? onion, chopped
4 oz. Green chiles or jalapeno peppers
10 ripe olives, chopped
2 lbs. Ground turkey
1 tsp. Ground pepper
2 tsp. Salt
2 tsp.. Hot sauce
? cups bread crumbs
? cup barbecue sauce
2 large eggs, lightly beaten
celery, onion, peppeersand garlic until they are tender about 5

Method:

Heat oven to 350 degrees. Lightly oil a loaf pan. In a skillet put the oil, celery, onion, peppeersand garlic until they are tender about 5 minutes.
Add the corn, chiles or jalapenos and olives and saute 4-5 minutes. Cool and set aside.
In a large bowl place all the remaining ingredients and add the ingredients in the skillet. Mix together and put in a loaf pan. Spread some barbecue on top and bake for about one hour. Remove from oven and let sit for 15 minutes before cutting.
