carrot apple salad (Low Fat)

Ingredients:

2 carrots, grated or julienned
1 apple, grated or julienned
1/4 cup raisins
1 Tablespoon honey
2 teaspoons lemon juice
1 Tablespoon apple juice

Method:

Mix carrots, apple and raisins in a small serving bowl. Mix honey, lemon
juice and apple juice. Taste to check sweetness. Add honey or lemon
juice to make it taste the way you want. Pour dressing over salad and
toss to coat thoroughly.

Helpful Hints:

Serves 2. This is a good salad for late fall
and winter when fresh greens are expensive.
