Lemon Sponge Pie


3 eggs - separated
1 1/4 cup sugar
1 Tablespoon melted butter
2 Tablespoons cornstarch
1 cup milk
juice of 1 lemon or 2 Tablespoons lemon juice


Beat egg yolks; add milk and sugar, then beat about 1 minute.
Add cornstarch, then milk, beating well after each addition. Fold well
beaten egg whites into mixture. Pour into an unbaked 8" or 9 inch pie shell. Bake at 450 degrees for 10 minutes. Lower oven temperature to 375 degrees then bake for 20 more minutes.
