Old Fashioned Rice Pudding


2 cups milk
1/2 cup uncooked Carolina Rice
1/4 teaspoon salt
3 egg yolks
3 tablespoons sugar
3/4 cup heavy cream


Bring milk to boil; stir in rice and salt. Cook over hot water until milk is absorbed, about 30 minutes. Beat egg yolks with sugar and cream. Combine with rice mixture. Add raisins, if desired. Pour into baking dish. Bake in preheated 350 degree oven for 15 minutes, until top browns.
Makes 8 servings.
