Rice Pie

Ingredients:

6 eggs
cups sugar
tsp. Salt
tsp. Cinnamon
1 lbs. Ricotta, (2 cups)
1/3 cups raw rice, cooked
1 tsp. Vanilla

Method:

Beat eggs well. Add the rice. Mix ricotta, sugar, salt andvanilla and cinnamon. Add to the eggs mixture. Blend well. Pour into a spring form pan. Bake at 350 degrees for one hour.
